To monitor consumption & purchasing of food and beverage throughout the Hotel and make recommendations to improve profit margins. To report the cost of food and beverage and ensure that it is within the budgeted cost.
Daily Cost Analysis
• Generate and review Daily Cost Reports, ensuring timely and accurate reporting.
• Monitor Cost of Sales to ensure operational efficiency and profitability.
• Monitor daily operational costs, identifying opportunities for cost reduction and efficiency improvements.
• Prepare and analyse comprehensive cost reports for management decision-making.
Inventory & Procurement Management
• Conduct daily inventory checks to ensure accurate stock levels.
• Perform inventory reconciliation to identify discrepancies and adjust records as necessary.
• Monitor stock movement to track usage and minimize losses
Budgeting & Forecasting
• Assist in preparing the annual budgets and cost forecasts, ensuring alignment with company objectives.
• Analyse financial data to ensure departmental expenses are in line with the approved budget.
• Monitor and track departmental expenses on a regular basis to identify potential savings or adjustments
Controls and Compliance
• Ensure full compliance with internal financial controls and external regulatory requirements.
Team Management & Collaboration
• Lead and supervise the cost control team, providing guidance and fostering a collaborative working environment.
• Work closely with department heads, especially F&B, Kitchen, Housekeeping, and Maintenance teams, to implement cost-saving initiatives and improve efficiency.
Reporting
• Prepare detailed month-end cost reports, providing clear and actionable insights for senior management.
• Present financial findings in a professional and understandable manner, enabling data-driven
decision-making.
Qualities
• Qualifications: Diploma
• Experience: At least 3 years post qualification experience.
• Personal Qualities: Organisational Skills, Planning and good communication
• Additional Skill required: Computer skills (Proficiency in Microsoft Office software: Word, Excel and PowerPoint, Accounting Software), numerical skills and basic knowledge of Hotel Operations
