Assistant Head Waiter

 

Duties and Responsibilities

  • Provide professional customer service to ensure memorable dining experience.
  • Greet customers, present food and beverage menus, propose “menu du jour”, suggests entries, advise on choice of meals, wines and beverages available and ensure order is taken accurately and delivered within proper time frame.
  • Assist and conduct briefing with junior team members to ensure proper communication in terms of feedback, complaints, occurrence of the day, events prior to service.
  • Supervise and assign tasks of other Beach Waiters/Waitresses prior and during service hours.
  • Assist in the integration of new employees by mentoring new employees on operational and procedural aspects.
  • Inspect restaurant dining premises, tables, chairs, eating tools are properly clean and free from dirt.
  • Verify all set up (tables, chairs, sunbeds), mise-en-place, cleanliness and availabilities of glassware, chinaware, linen and amenities prior to service and during service.
  • Assist and help with mise-en-place through tasks distribution and ensure monitoring and work completion prior to start of service.
  • Ensure all required condiment and sauces for servings are replenished such as but not limited to salt, pepper, mayonnaise, ketchup, vinegar, chili and other creams.
  • Beach Closure - Ensure all sunbed are well arranged, hazard free and properly clean upon departure of customers and before closing the restaurant.
  • Assist and help in all inventory exercises related to restaurant and bar operations and provide regular report(s) to General Manager as instructed.
  • Excellent product knowledge of food and beverage available and be familiar with restaurant concepts.
  • Ensure proper liaison with bar and kitchen for food and beverage preparation and delivery within a reasonable time frame.
  • Clean table, remove leftovers, replace required table set-up amenities, and dispose waste.
  • Communicate with customers during service to ensure satisfaction and if complaints or queries may occur, take initiative for immediate remedial action and inform General Manager
  • Communicate properly and lead junior team members and ensure complete collaboration with other Head Waiter(s) and Restaurant Supervisor for optimum service delivery and customer satisfaction.
  • Always be punctual and maintain visibility during service hours.
  • Ensure professional assistance to clients/guests without engaging or providing in any sort favouritism against the good and fair operational practice of the company. Always lead by example.
  • Verify that all billing procedures are detailed, accurate, rightly charged and posted on system.
  • Properly train junior team members and demonstrate professionalism and appropriate interpersonal skills and body language to be maintained.
  • Assist and monitor the Outside Catering of the business unit.
  • Take initiatives and professional decisions to ensure the restaurant operations is not affected with the aim to maintain the image of the business unit.
  • To systematically check the occurrence book and assist in taking appropriate actions in collaboration with the General Manager.
  • Adhere to Health and Safety regulation and enforce sanitary practices for food handling, general cleanliness, and maintenance restaurant and dining areas.
  • Ensure all standard operating procedures are carefully followed and applied.
  • Any other cognate duties related to the post.

  Requirements

  • SC Level
  • Hands on work experience as Head Waiter/Maitre d`Hotel in Restaurant and Hotel
  • Good communication skills - verbal and written
  • Professional and good customer service skills.
  • Punctual and flexible in working hours (odd hours/weekends, public holidays)
  • Knowledge in POS system.
  • Prepare payments and process billings.
  • Prepare roster in accordance to operational requirements.

 Note

  • It is highly preferable that the candidate lives in the northern part of the Island.
