Responsible for recommending wines and having a thorough and current knowledge of wines to deliver an excellent guest experience while assisting with achieving departmental targets.
ESSENTIAL FUNCTIONS
- Recommends the proper wines to guests in order to complement their meals (Wine pairing).
- Delivers a high level of wine service, replacing corked bottles before they reach the guest, decanting bottles if requires, ensuring that wine is at appropriate temperature.
- Knows the full wine list in order to assist guests with their choices, being able to make recommendation to guests for a better choice.
- Evaluates guest satisfaction by seeking feedback and directly interacts with guests with a focus on continuous improvement.
- Ensures that fridges, stores, alcohols and supplies are locked and secured before departure.
- Records the loss through spoilage or waste and reports loss immediately to department head.
- Assists with the monthly stock take of all alcohols and stores to exact quantities.
- Evaluates cost effectiveness of all aspects of the F&B operations and develops and implements cost saving and profit enhancement measures.
Monitors the cleaning level in all areas of the F&B and makes sure that all team members adhere to the health, hygiene, safety and quality standards imposed.
REQUIREMENTS
- At least 2 years experience as Sommelier in similar or larger size hotel operations.
- WSET Level 3
- Thorough knowledge of wines including foods, beverages, spirits, supervisory aspects, service techniques and guest interaction.
- Must possess strong organizational and people management and interpersonal skills.
- Ability to effectively deal with a variety of audience, some of whom will require high levels of patience, tact and diplomacy.
EDUCATION
Higher School Certificate or equivalent.
