Job Description

Job Scope Summary 
To monitor consumption & purchasing of food and beverage throughout the Hotel and make recommendations to improve profit margins. To report the cost of food and beverage and ensure that it is within the budgeted cost. Ensure food and beverage items are accurately recorded and securely stored. Perform month end close process for food and beverage items.

Duties & Responsibilities 

  1. Prepare daily food & Beverages cost reports.
  2. Prepare month end food and beverage cost report.
  3. Establish per stock levels for outlet beverage stocks and carry out monthly spot checks.
  4. Participate in bimonthly market surveys of fresh food items.
  5. Prepare and distribute to all respective departments the list of slow and non moving items on a monthly basis.
  6. Assist with costing of special events for Food & Beverages department.
  7. Stock count of Opex/Linen and reconciliation
  8. Monthly F&B Menu Engineering 
  9. Update Purchasing system for new food & Beverage items.
  10. Quarterly audit of system vis a vis menu.
  11. Perform monthly comparisons of Food & Beverages cost percentage against other hotels.
