Job Description

Job Summary

 

Bartenders prepare and serve alcoholic and non-alcoholic drinks at establishments that have bars. They work in a wide variety of environments and need an assortment of skills to do their jobs well. They represent a good image of the outlet, always abide the hotel rules and regulation of the company, ensures that they are fully knowledgeable of all bar products, have a good capacity to up sell and delivered all guests order in a professional way within lack of time.

 

Key Duties and Responsibilities

 

  • Collect all bars key from the security early morning.
  • Open the bar as per standard and procedure of the hotel.
  • Collect updated arrival list from the reception.
  • Make M-E-P for arrival drink according to the schedule time 5 mins before arrival at the hotel.
  • Set up all bottle on the display as per hotel standard and procedure.
  • Check and complete all M-E-P, fresh juices and garnitures before service start.
  • Prepare Daily smoothie M-E-P and fresh juices for breakfast.
  • Prepare and mix cocktail.
  • Served drink to waiter and guest according to the standards and procedure.
  • Prepare cocktail and make set up and decor for GM cocktail.
  • Ensures that clean ice is always ready and available for drinks.
  • Always have a good linen stock near service station.
  • Supervise service and waiters in the absence of the Bar manager and Asst.
  • Greet and seat guests.
  • Send farewell drinks to the reception, prior to departure time.
  • Responsible to record all arrival and farewell drinks and raise billing.
  • Check availability of all opex needed for the smooth running of operation.
  • Check availability and non –availability of all items before service starts
  • Inform bar manager and Asst. of non availability items.
  • Check all bar menus, ensures all menus are kept clean and tidy at all times, are kept in a safe and dry place.
  • Responsible to keep bar store clean at all time, ensures that all glassware are placed on the shelves in their respective places.
  • Keep bar store always locked
  • Responsible for all cleanliness inside the bar.
  • Check cleanliness of the bin.
  • Ensures all operating equipment is in good running condition.
  • Ensures that bar equipments is cleaned and place in their respective place after use.
  • Advise bar manager of any missing opex
  • Assign bar waiter to collect all bar materials from dish-wash area after midnight and store them in the bar store.
  • Ensure that M-E-P of hot snacks came to the bar before 19h00 p: m.
  • Records entries of all opex in inventory book.
  • Responsible to minimize all bar expenses.
  • Responsible to keep beverage costs below as per the set target.
  • Responsible to do requisition and control all items as number of guest in house.
  • Responsible for bar inventory on all beverages do each month by the cost control.
  • Ensures that he use the proper measure and keep a good balance of spirits for cocktail.
  • Ensures that he keep cocktail consistency at all time.
  • Innovate and create cocktail recipes, bring new ideas at the bar.
  • Show fabulous atmosphere at the bar to bring up selling.
  • Build up and mix cocktail to guests within lack of time.
  • Responsible to organize all jobs given by their superior for any type of function.
  • Responsible to do all requisition on MC.
  • Responsible to check all requisition delivered by the store man.
  • Responsible to check all fresh fruits delivered by the supplier.
  • Clean bar counter and inside the bar.
  • Has the break of 15 minutes to have tea
  • Accomplish any cognate duties assigned to them
  • All barmen check the duties’ planning and begin to perform their respective tasks
  • Attend briefing with bar manager

All bartender waiters serve guest as per set up standards and procedures

  • Places cutlery and folded napkins on each tables for lunch service
  • Clean all tables and chairs on pool deck                           
  • Clean breakfast M.E.P after breakfast
  • Collect all soiled linen and changes them for clean ones from linen room
  • Records stock of linen, tables cloth, lunch and tidbits napkins, coasters and lito in linen book
  • Fold napkins for lunch service
  • Keep all clean coaster and tidbits napkins in linen in linen basket placed on the counter
  • Keep enough lunch napkins for service and takes back remaining stock of table cloth and napkins to dispense bar for storage
  • At 15h00, collect and change all soiled linen from linen room
  • Cleans glass washing machine, fills in fresh water and appropriate cleaning chemicals
  • Washes and polishes all glassware needed for operations: Hiballs, old-fashioned, hurricanes, beer, pyramid, sherry, port, sketkelch, brandy, bathrooms, liqueur and glasses
  • Clean all shelves doors and fridges
  • Brings ice cubes in ice trolley
  • Fills all fridges respectively
  • Stores consumables in cupboards
  • Bring back remaining stock of consumable for storable in bar store
  • At 11h00, collect fruit from main store
  • Afternoon tea pool deck
  • Prepare M.E.P for afternoon tea.

 Changes all tables’ cloth and replace with clean ones

  • Places tea cup and sauces, sugar bowl, with sugar tong, tea spoons, cutlery, folded napkins and service plate, tables number and ashtrays
  • Ensure he has the right menu, pancake menu and lunch menu
  • Serve guest as per established standards and procedure.
  • Clear out all wine coolers and wine.
  • Raise all beverages and food billing and present to the guest as per hotel standard.
