Pastry Chef

 • Prepares and presents baked pastries 

 • Prepares and presents yeast raised pastries 

 • Prepare and presents afternoon tea items 

 • Prepare and presents plated and buffet desserts including:   

      o Frozen desserts 

      o Hot desserts 

      o Cold desserts 

      o Specialty desserts 

      o Design, prepare, cover and decorate cakes for festive occasions 

 • Maintains hygienic standards, practices and hygienic kitchen 

 • Controls and analyzes, on an on-going basis, the level of the following in the pastry Department: 

        o Sales 

        o Costs 

        o Issuing of food 

        o Ordering, Handling and storage of commodities 

        o Quality and presentation of food products o Condition and cleanliness of facilities and equipment 

        o Implementation of the Hotel HACCP plan. 

        o Guest satisfaction 

        o Marketing  

  • Trains his team to deliver quality bakery and pastry items in accordance with IHG standards. 

  • Assists the Executive Chef in making recipes and maintaining up-dated and accurate costing of all dishes prepared and sold in the Food and Beverage operation 

  • Assists the Executive Chef in planning and organizing successful Food and Beverage activities 

  • Conducts daily briefings in the Pastry Department and other meetings as needed to obtain optimal results 

  • Attends and participates to other meetings as required by the administrative calendar 

  • Monitors local competitors and compare their operation with the hotel Food and Beverage operation 

  • Keeps aware of trends, systems, practices and equipment in food and beverage through trade literature, hotel show and site visits 

  • Assists the Executive Sous Chef in developing training plans, develops training material in accordance with IHG guidelines and implements training 

  • Maintains personal hygiene 

  • Perform any duties and tasks entrusted to you by InterContinental Mauritius within the framework of your band category, according to your skills and competencies.
