Act as a coach

Communicate to Executive Chef the training needs of the TM and conduct on the job training

Ensure that discipline prevails within the team and communicate any disciplinary issues to Executive Chef / HR

Promote and maintain effective interpersonal relations

Ensure that set ups and requirements are done as per events orders

Ensure that ll delivered material are in perfect conditions and impeccably cleaned

Participate in Eco Standard/ Sustainable Responsibility set by the hotel

Prepare monthly rosters of TM whilst ensuring a proper manning during each shift

Monitor leaves in respective outlet

Manage the outlet’s budget efficiently and effectively

Control of expenses (Breakages, linen, materials, etc.)

Monitor the outlet's operation equipment

Conduct monthly inventory on materials used in the outlet / Villas

Check and approve stores requisitions whilst ensuring par stock at the Outlet are maintained

Submit at the end of each month breakage reports to Executive Chef

Ensure energy saving (electricity, gas, water)

 Ensure respective TMs are operating as per Quality Management System

Notify the Sustainable Development Department of any matters that may pose any impact to the environment and society
