Role Responsibilities
Leadership & Team Management
- Take part in training and implement accordingly.
- Adapt to unexpected situations.
- Remain knowledgeable of, and compliant with, the rules and regulations prevailing in the establishment.
- Supervise the performance of outlet Team Members and carry out routine inspections.
- Conduct interviews, selection and recruitment of Team Members.
- Conduct performance appraisals and identify necessary training measures for respective Team Members.
- Identify departmental trainers, assign training responsibilities and meet with departmental trainers monthly.
- Develop and implement training plans for the department together with HR/Training.
- Recommend on Team Members' matters and promotions.
- Act as a coach.
- Ensure discipline prevails within the team and communicate any disciplinary issues to HR.
- Build an efficient team by taking interest in Team Members' welfare, safety and development.
- Maintain excellent interpersonal relationships amongst the team.
- Inform Team Members of VIPs and specific requests.
- Ensure Team Members operate in accordance with the Quality Management System.
- Ensure Team Members operate in accordance with Safety & Health regulations and policies.
- Ensure Team Members' grooming is in accordance with hotel standards.
Guest Service & Experience
- Ensure guest allergies pertaining to food are taken into consideration in culinary operations, communicated to the team, and followed up on accordingly.
- Ensure guest and repeater satisfaction at all times and remain fully aware of their preferences.
- Stay conversant with the daily events document and ensure a briefing is conducted on a daily basis.
- Handle and monitor guest complaints and ensure the relevant follow-up action is taken.
- Coordinate and supervise activities within the department.
- Interact regularly with guests to obtain feedback for improvement.
- Ensure all outlet Team Members provide an effective and efficient service at all times.
Financial & Budget Management
- Ensure the staff cost budget is strictly adhered to and managed on a monthly basis.
- Manage the outlet's budget efficiently and effectively.
- Set the annual operating budget and ensure it is strictly adhered to and managed on a monthly basis.
- Establish a cost management plan.
- Manage each kitchen outlet as an independent profit centre.
- Collaborate with the F&B Manager and Management to develop strategies and special events to promote sales.
- Ensure the food cost budget is strictly adhered to.
- Manage food budgeted revenue and ensure it is attained on a monthly basis.
- Prepare the outlet budget (Capex, Opex, etc.) and manage it efficiently and effectively.
- Ensure all menu costing is carried out on the Win HMS system and work out selling prices with cost controllers.
Kitchen Operations, Quality & Standards
- Ensure the good functioning of kitchen equipment and liaise with maintenance for any non-conformity.
- Ensure food cost control processes are implemented and followed.
- Ensure SOPs are updated in a timely fashion and followed.
- Ensure compliance with all safety standards.
- Maintain good housekeeping in the department.
- Apply menu engineering processes — studying the profitability and popularity of menu items and how these factors influence menu placement — with the goal of increasing profitability per guest.
- Prepare and communicate the Kitchen Operations plan and monitor its implementation.
- Ensure outlets are kept in good running condition.
- Ensure a menu "fiche technique" is available in all kitchen sections.
- Ensure kitchen operations are manned and operated as per instructions.
- Manage and control the outlet and stewarding department.
Sustainability & Environment
- Participate actively in the Eco Standard / Sustainable Responsibility programme set by the hotel.
- Ensure energy saving (electricity, gas, water).
- Comply with all sustainability commitments and practices implemented within the business unit.
- Notify the Sustainable Development Department of any matters that may impact the environment or society.
