Job Description

  • Provide professional service of wines, champagnes, and water to guests.
  • Explain the characteristics, qualities, origins, and specificities of wines and champagnes.
  • Recommend and advise guests on their selection of wines and champagnes according to their preferences and meals.
  • Ensure proper wine and champagne service in accordance with established standards and procedures.
  • Maintain and clean all wine-service equipment and designated areas, including glasses, decanters, wine cellars, ice buckets, wine stands, brass fittings, floors, and glass surfaces in cellar and storage areas.
  • Ensure the proper setup and arrangement of wine glasses and wine stands in the restaurant.
  • Monitor and maintain the presentation and organization of wine storage and service areas.
  • Regularly update and replace selected pages of the wine list.
  • Ensure that wines and champagnes are stored under appropriate conditions and according to established standards.
  • Maintain up-to-date knowledge of the wine list, vintages, grape varieties, regions, and available products.
  • Work closely with the restaurant and culinary teams to ensure appropriate wine and food pairings.
  • Ensure compliance with hygiene, health, safety, and workplace regulations.
Technical Skills 

  • Good command of both French and English, spoken and written.
  • Good knowledge of sommellerie, wine regions, oenology, and wine tasting techniques.
  • Knowledge of culinary arts, table service, and wine and food pairing.
  • Strong and detailed knowledge of different types of wines and champagnes.
  • Knowledge of professional wine presentation and service techniques.
  • Familiarity with wine terminology, including origin, grape variety, vintage, characteristics, personality, body, aroma, and finish.
  • Knowledge of wine storage and cellar management practices.
  • Knowledge of applicable regulations, labour standards, hygiene, health, and occupational safety requirements.
