What Your Days Would Look Like

No two days are exactly the same, but here's an overview of what you will be doing:

Main Duties and Responsibilities

  • Assist the reporting line in the development, implementation and continuous improvement of the hotel's Food Safety Management System (FSMS).
  • Conduct regular inspections of all food production, storage and service areas to ensure compliance with food safety standards and company procedures.
  • Coordinate and facilitate external food safety audits and inspections, ensuring all required documentation is available.
  • Liaise with Heads of Department to develop, implement and monitor corrective action plans for any non-conformities identified during internal or external audits.
  • Conduct hazard analyses and develop, implement and maintain departmental HACCP (Hazard Analysis and Critical Control Point) plans.
  • Develop, review and update food safety policies, procedures, Standard Operating Procedures (SOPs) and work instructions.
  • Collaborate with the Human Resources Department to develop and deliver food safety and hygiene training programmes for employees.
  • Conduct internal food safety audits to verify compliance with local regulations, company standards and internationally recognised food safety standards.
  • Monitor food handling, storage, preparation and sanitation practices to ensure compliance with food safety requirements.
  • Manage and maintain all food safety documentation, records, audit reports and regulatory compliance files.
  • Investigate food safety incidents, guest complaints and non-conformities, identify root causes and recommend corrective and preventive actions.
  • Monitor pest control, cleaning and sanitation programmes in collaboration with relevant departments and external service providers.
  • Stay updated on changes to food safety legislation, industry best practices and certification requirements, ensuring the hotel remains compliant.
  • Prepare periodic food safety reports and present findings and recommendations to management.
