Job Description
KEY RESPONSIBILITIES
- Provide analysis of F&B stores consumption
to handle the ordering of Food and Beverage as accurately as possible.
- Analyze all food and beverage costs on a
monthly basis and making recommendation of alternatives on cost savings.
- Maintain the food and Beverage costs updated on
a daily basis.
- Establish and maintain a database for food and
beverage inventory stock including up-to-date pricing.
- Establish and maintain a database for food and

- Coordinate, attend and monitor all food and
beverage physical inventories to ensure accuracy.
- Ensure proper storage and issuance of all food
and beverage items.
- Establish and maintain a cost allocation
transfer system for food and beverage supplies to the various departments.
- Assist management in menu costing in order to
establish menu item sale prices.
- Carry out spot-checks on the hotel stores rotating stock-takes.
- Approve all store requisitions.
- Account and monitor for any stock transfer between departments.
- Process monthly consumption from Material Control
- Complete end of month/ weekly closing
procedures and submit monthly/weekly reports
- Invoice control to be performed on each
receiving and ensure invoices matches with invoice, purchase order and
good received note. Also, to ensure the correct general ledger accounts
are correctly recorder.
- Overview of store operations, to ensure
receiving and booking of requisitions are done daily
- Scheduling and performing inventory before end
of month closure
- End of month inventory should be reconciled
with the accountant and any discrepancy should be thoroughly investigated.
