Constance Belle Mare Plage, is seeking a highly organised and efficient Kitchen Coordinator to join our culinary team. The successful candidate will play a crucial role in ensuring the smooth operation of our kitchen facilities and supporting our chefs.
Job Description
- Order compilation and processing.
- Verification of product on delivery, ensuring quality and the quantity tallies the initial order (PO).
- Responsible to deliver received product to each outlet.
- Responsible for outlet transfer processes (Butchery and Pastry).
- Leave and attendance management.
- Assist in the Kitchen-Maintenance process:
- To input the maintenance related issues/task on hotel maintenance request system.
- Keep the maintenance snagging list updated.
- Report pending maintenance issues on snag list.
- Minutes of meeting of kitchen-maintenance meeting and communicate by mail.
- Pledge process recording and communication to the Executive Chef.
- Food wise process monitoring, recordings and reporting.
- Quality and food safety related recordings and filling – Related to food safety and ISO 22000.
- Sustainability, safety and health - process support.
- Additional task design by the executive sous chef & new process.
- Ensure ordering and requisition in the absence of the Senior Chef de Cuisine.
Qualifications
- Diploma or degree in Culinary Arts or Hospitality Management
- Minimum 2-3 years of experience in a similar role within a high-volume kitchen or restaurant setting
- Strong knowledge of kitchen management principles and culinary techniques
- Excellent organisational and time management skills
- Proficiency in inventory control and stock management
- Demonstrated ability to lead and motivate a team in a fast-paced environment
- Strong communication skills in English; knowledge of French or other languages is advantageous
- Thorough understanding of food safety regulations and hygiene standards
- Valid Food Safety Certification
- Proficiency in basic computer skills, including Microsoft Office and kitchen management software
- Familiarity with Mauritian cuisine and international culinary trends
- Ability to work flexible hours, including evenings, weekends, and holidays
- Strong problem-solving skills and attention to detail
- Adaptability to work in a multicultural environment and handle high-pressure situations
