Responsible for cleaning and trimming the seafood products to prepare them for the rest of the processing operation
Job Description
- Ensure that all received stock is dated before going to the freezer and store rooms.
- Ensure that enough stock is defrosted for the day’s business.
- Ensure that all portions are correct and that wastage is accounted for.
- Keep working area clean at all times
- Complete the filleting chart daily and assist in stock counts.
- Follow all correct HACCP procedures and assist in all relating paperwork.
- Assist in temperature recording.
- Ensure that all received stock is dated before going to the freezer.
- Follow weekly and master cleaning schedules for filleting section.
Qualification & Experience
- School certificate or any related qualification
- Work experience in the hospitality sector in a similar position would be an advantage.
