As a Chief Steward under the direction of the Back of the House Manager and Executive Chef, you will be responsible for enforcing the highest possible cleanliness and hygiene standards in all food processing facilities.
Main Duties
- Ensure Back of House areas are maintained to the highest cleanliness standards and cleaning schedules are followed and completed.
- Conducts daily briefings and other meetings as needed to obtain optimal results, establishes and maintains effective employee and interdepartmental working relationships.
- Controls and analyzes on an ongoing basis the level of Breakage, Quality of support provided to other section
- Manage all functions of the stewarding and Hygiene operation to achieve the optimum departmental costs & optimum quality level of sanitation.
- Develops and presides the Food and Beverages breakage committee involving section heads, constantly controlling and finding ways to reduce breakage throughout the Food and Beverages department.
- Handle administrative work updated and keep updated files on the following stewarding matters: Finance, Standards, Training, Outlets, Meeting, Scheduling, Vacation Planning, related etc.
- Conducts such functions as interviewing, hiring, performance evaluation, coaching, counseling, and taking disciplinary actions to ensure the appropriate staff productivity and efficiency.
- Ensure compliance with laws, regulations, and codes of practice for environment, health, safety, and hygiene and ensure staff similarly complies.
- Conduct and document routine health and safety inspections.
- Keeps aware of trends, systems, practices, and equipment are in Stewarding and Hygiene operations.
- Ensure that staff is adequately trained and instructed in safe work practices, emergency, and evacuation procedures.
- Ensure that all staff has the necessary personal protective equipment to undertake their tasks and that proper training is delivered for its use.
- Ensure energy and water reduction, waste minimization, recycling policies, and initiatives are observed by all personnel.
Qualifications
- Minimum hospitality degree or equivalent
- Excellent written and verbal English communication skills
- Strong interpersonal and problem-solving abilities are essentials.
Experience
- Minimum of 5 years of experience as a similar position in a 5-star hotel/Catering Operations
Skills
- In-Depth Knowledge of Stewarding Operating procedures, HACCP / EFST, managing, and direction.
- Pleasant & Positive Attitude, Enthusiastic and outgoing.
