While considering the guests’ and the food served, the sommelier is responsible to select wines, build and maintain a wine list fitting the outlet/s in consideration of the right price, products and presentations.
1. Greets the guests and inquires about their interest in wine with their meal
2. Provides complete information regarding wines and their compatibility with menu items
3. Assists servers with wine service
4. Checks back with guests to assure their satisfaction
5. Hosts and manages hotel wine reception
6. Is a Wine consultant for Conference Services and Catering clients
7. Keeps in contact with wine storeroom to ensure availability and correctness of products
8. Meets with purveyors to stay informed of product availability, potential new products, discounts, etc.
9. Conducts in-service training for staff and inform others of new product
10. Revises the wine list on a continual basis
11. Makes pricing recommendations
12. Depletes dead stock wines to keep inventories stable
13. Communicates with the restaurant managers and Food and Beverage managers on a daily basis
14. Creates wine programs and PR events to attract additional wine sales
15. Performs server’s duties when scheduled
16. Responds properly in any hotel emergency or safety situation
17. Performs other tasks or projects as assigned by hotel management and staff
18. Demonstrates a high degree of standards awareness
19. Promotes teamwork and acts as role model
20. Attends all scheduled training sessions
